I personally hate dubbing, i prefer to hear the original speake's tone of voice and pronounciation. Subtitles also help learn a language. But even in english I always turn them on, it really helps to see the spelling of words. Like I was watching "the witcher" a few days ago and I liked knowing "dickstra" is actually "djikstra" or "skoiate" is "scoi'atel" there are many benefits to subtitles, but it is a subjective preference.
Annecdotal evidence: on a recently-launched YouTube channel (10k+ views so far) we have 40% of the views with English subtitles. 58% use no subtitles. 30-ish % of views come from English speaking countries. (We manually upload subtitles.)
However, I would very much appreciate being able to upload a second audio track instead of AI generated dubbing.
I saw a video on coffee tasting that had a second audio track without slurping sounds. so I don't know how widely available the feature is but YouTube does have some version of uploading alternative audio tracks
