What tools would you use to build physical infrastructure from scratch?

Curious for people that still have a need for physical infrastructure what software you'd be using for

* dhcp/dns

* provisioning (os and apps)

* config management

* virtualization

* workstations (and management)

* licensing

* lots of other stuff

There's so many options, just trying to see what has and hasn't worked for others. I know every network is different, but some services and infrastructure needs are universal.
