I guess it's more acceptable to use #000 for text because the curves in most fonts are rather thin. Text with a larger font will appear darker than text with a smaller font. Just as a thin line will appear bright next to a thicker line, even though they have the same color. The examples are not about the color of text, the focus lies on backgrounds and shadows. In fact most of the text in the pictures is white.
