Playing with colors in the best way possible

So how do choose colors for your next million dollar funded startup idea? What do you mainly focus on? How you build your ui when going for the MVP? I face this issue alot. We have alot of ai tools and my favorite one is v0 by vercel. But what about colors? AI tools is awful in giving colors? Reason they don't have the context of the products launching everyday.
