How do these work? You presumably must have to pair the phone with the headphones, thus breaking any illusion the user might have that they're wired headphones?

If you read the article, it's not meant to be a trick on the user, but a way of working around Apple's restrictions over the lightning port.

Essentially the wire is only a power cable, saving the cost and bulk of a battery.

It does. My Airpods Max connects to my iPhone through a physical wire.
