Well, that's how we got cultivated oyster mushrooms in the first place, isn't it? With some Germans in WW1 wanting a quick way to turn sawdust into food. You can use mushrooms to turn waste streams into useful stuff already. It's just that it tends to be waste streams that are already pretty useful, and what you get out of it isn't all that profitable (tasty, though!)
