It's not that we "create" space-time it's that everything we measure is from the perspective or filter of human-perception. (The quantum world doesn't really exist, that's how our bodies perceive reality!)

Meaning that, as a human, if I make a human-made telescope, it will see things that the human eye is able to see or perceive using the telescope. If you have a telescope made by a mantis shrimp (https://phys.org/news/2013-09-mantis-shrimp-world-eyesbut.ht...) then it would be able to see things that the mantis shrimp would be concerned about, and also would likely look drastically different than anything our minds can conceive of at all because we lack the sensory input to generate the new concepts from.

Science is at a very pathetic place right now.
