Google experimented with Assistant + related technologies for a while now: translate, voice recognition, OCR, contextual search work well. I think they realised that AI works best when omnipresent and invisible. Many people don't want to converse with an AI (or just anyone...), they just want things to happen with as little interaction as possible, so Google incorporated that "zero interaction" philosophy into their services.
