Do you think AI can be used for this mode of copywriting. Human in the loop, but primarily for editorial review and final touches?

I am skeptical. I feel like I already have to sift through a lot before I find something I think is worth reading. Knowing it is written by a computer makes me feel less interested in reading it.

This is a totally fair point. Not encouraging dishonesty, in fact I hate it... but what if you didn't know it was written by a computer? Would the AI fool you?
