- Ratio by Michael Ruhlman

- The Food Lab by J. Kenji Lopez-Alt

- Salt, Fat, Acid, Heat by Samin Nosrat

I can also vouch for Ratio, and in general any book by Ruhlman I've read has been excellent (give Egg a go)
