Having designed an AR experience for children and doing quite a bit of research into this problem a few years ago... You incorporate thumb controls on the sides of the device where you would naturally hold it. You use physical movement of the tablet to move things in the environment. Its limiting, but it works and can allow for fun interaction with the environment.
